- 4 Chili pepper
- 3 carrots
- 2 Garlic (pealed)
- 2 Kg black olives
- 1 liter of lemon juice
- 1 Kg Green Olives
- 1 Liter virgin olive oil
- Cut the olives into rings and remove the seeds.
- Cut the carrots into thin stripes
- Cut the chili pepper vertically and remove the core seeds.
- In a deep bowl steer the olives with the carrots, olive oil, garlic, chili and the lemon juice.
Important notice: It is very important for the olives to be hard with low salt. If the olives are salty you can soak it in water for a day before preparing the salad.
