  • 1 Kilogram of soft Tomato
  • Half Kilogram of eggplant
  • 1/4 Kilogram of green pepper and hot Chilli
  • 2 big hard tomato
  • 4 cloves of garlic
  • Spices (to taste) Cumin + Ginger + salt
  • Chicken broth cube
  • Vegetable oil

Recipe Instructions

  1. Make a tomato juice from the soft tomato using a blender
  2. Cut the two big hard tomato into rings
  3. Clean the pepper and remove the seeds
  4. Peal eggplant and cut into rings
  5. Fry the eggplant with pepper and Chilli in vegetable oil after cutting the pepper into small pieces
  6. In a tray add 2 tablespoons of the vegetable oil used in frying then add minced garlic and mix for 2 minutes
  7. add tomato juice to the tray for 10 minutes till boilling
  8. Add Cumin, salt and Ginger then add half cube of chicken broth
  9. Add ingredients as layers, first eggplant then green pepper then tomato rings then repeat the cycle of layers again whit the remaining
  10. Sprinkle the remaining of the broth cube on the top then add 1/2 cup of water
  11. Put the tray in the oven for about half an hour till it become thick
  12. serve with rice.
