- A medium sized onion
- Two average sized potato
- Carrots cut into cubes
- Cup of Red Lentils (washed)
- Red Pepper
- 4 to 5 cups of water depending on the density of the mixture
- Ditalini shaped pasta
Stir chopped vegetables with butter for a period of minutes over medium heat, then add lentils and toss with the vegetables. Add water to the mixture and leave the soup on the heat for about 30 minutes for the vegetables and lentils to be cooked then add salt and cumen. Add the mixture in the electric blender then add hot water as needed to reach the desired soup thickness (please note that this is a high density soup so don’t add plenty of water).
Fry the Ditalini shaped pasta with some butter to reach a golden color then add the blended mixture, turn off the heat and cover the container for several minutes. Serve with roasted bread.
